Zerno × Tala Coffee Roasters: one coffee, explored across the Z1 and Z2

Some coffees give you one thing. This one has some depth to it.


Carlos Cadena is a medium-light, natural-processed Mundo Maya varietal from Veracruz, Mexico, roasted by our Chicago-area friends at Tala Coffee Roasters. We’re picking up notes of sweet tarts, dried cranberry, and rosé. The cup is bright, sweet, medium-bodied, and especially responsive to how you grind it—which is exactly why we wanted to explore it here.


So we worked with Tala to develop a custom brew guide for Z1 and Z2 users: one coffee, recommended burr sets for each grinder, dialed in for both espresso and pourover, along with accompanying recipes to help you get the most out of every brew.

 


The recipes below are where we landed. We’d recommend treating them as a starting point, then experimenting to find the right configuration for your ideal cup. Adjust the grind or the water temp, taste what changes, and stick with the version you like best.
